    Shortbread Cookies is the best yummy treat during the holiday season. They are effortless to make but look incredibly impressive. They will take your baking skills to the next level and become a traditional family activity during the festive time! These shortbread cookies are very soft, flaky and delicate. The recipe is easy, and the cookie cutting part is a lot of fun to involve kids, friends and loved ones.

    INGREDIENTS:

    • Butter at room temperature (regular or lactose-free) – 250 g
    • Caster Sugar (I use powdered brown sugar) – 125 g
    • Egg – 1 pcs
    • Flour (sifted) – 250 g, plus extra for dusting
    • Corn Starch – 125 g
    • Baking powder – 1 tsp
    • Vanilla extract – 1/2 tsp
    • A pinch of salt

    COOKING METHOD:

    1. Start with mixing the butter and sugar with a stand – or hand mixer until fluffy and light colour.
    2. Next, add an egg and the vanilla extract. Mix again until smooth.
    3. In a separate bowl, mix the sifted flour, baking powder, corn starch, and salt pinch.
    4. Add the flour mixture to the butter mixture in portions and knead a smooth dough.
    5. The dough will be soft and delicate but holds its shape and doesn’t stick to your hands. Wrap the dough with cling film and chill in the fridge for at least two hours.
    6. Preheat the oven to 180 ˚C (Conventional).
    7. Cut a quarter of the dough and keep the rest of it in the fridge. Put the dough on a dusted flour surface and knead it for a few seconds to make it easier to roll out. Roll it to 4-5 mm thickness. You can also roll the dough directly on the baking paper. Just keep in mind that for easy and fun work, you should keep your dough chill. The longer you knead it and work with it, the softer it gets and harder to work with. Simply because butter starts to melt, if that happens, just bash it into the fridge for a few minutes. And work with another piece of dough in the meantime.
    8. Finally, it is a fun time! Using different cookie cutters, shapes and stamps, cut out the pastry.
    9. Carefully place your shortbreads on a baking tray lined with some baking paper.
    10. Bake your cookies in the oven on the middle shelf for approximately 10-12 minutes.Keep an eye on them so that they don’t burn! Cookies are ready when the edges become light brown!
    11. Remove the cookies from the oven and let them cool off completely. I know it’s the most challenging part, as its incredible aroma fills not only the kitchen but the whole house.
    12. Store your cookies in an airtight container (glass or metal).
    13. Finally, serve them with a cup of tea or a glass of warm milk. Santa would love these cookies as well, so keep some for him too! :)
